One night might take you from a Speyside single malt to a Kentucky bourbon; the next, from a triple-distilled Irish whiskey to a peated Islay dram.

Every whiskey poured tonight comes from a single distillery in County Cork — Midleton — and yet no two are alike. From the mellow depth of an 18-year-old blend to the crown jewel of Irish single pot still, this is a guided journey through the full range of what one great Irish distillery can do.

Whether it's your first proper Irish whiskey or you've already got a shelf of them at home, you'll leave understanding exactly why each one tastes the way it does. Newcomers get a relaxed, jargon-free way in. Enthusiasts get pours that are genuinely hard to find in a glass — including a lineup that would cost you well over a thousand dollars to buy by the bottle.

Jameson 18 Single Malt - the smooth, rounded benchmark of long Irish maturation
Midleton Very Rare Blend - the distillery's flagship prestige blend, hand-selected and released just once a year
Yellow Spot Single Pot Still - single pot still from the historic Spot range, bright and fruit-driven
Redbreast Lustau  Single Pot Still - single pot still finished in oloroso sherry casks, all dried fruit and spice
Method & Madness Single Pot  - Midleton's experimental arm, pushing pot still into unusual cask territory
Redbreast 21yo Single Pot Still - single pot still at 21 years; for many, the finest expression of the style in the world
 
Four of the six are single pot still — a style made almost nowhere outside Ireland — which makes this less a tasting and more a masterclass in Ireland's signature whiskey.What you'll learnNo lecture, no prior knowledge required. Over roughly two relaxed, entertaining hours, your host will take you through:
  • What single pot still actually is, why it's uniquely Irish, and how it differs from single malt and blends
  • How one distillery — Midleton — produces this much variety from what starts as similar spirit
  • How cask choice (bourbon, sherry, fortified wine, virgin oak) completely reshapes the same whiskey
  • How to nose, taste and talk about whiskey with confidence
Then you put it all into practice, glass by glass, building from the mellow 18-year-old up to the rare and aged pours that close the night.
 
Coming alone? You won't be for long.
 
Plenty of guests book solo, and it's one of the friendliest rooms in Sydney. You'll be seated around a shared table in our Double Bay tasting room, swapping impressions with fellow whiskey-curious guests from the very first pour. Grab a friend, bring your partner, or come on your own — either way you'll leave knowing more people, and a lot more about whiskey, than when you arrived.

The tasting notes are yours to discover

We don't publish tasting notes ahead of time, and that's deliberate. This masterclass is about training your own nose and palate, not reading someone else's.

On the night, you'll learn how to nose a whisky properly, what to look for on the palate, and how the finish tells you about the cask it came from. Expect to discover a wide range of aromas and flavours, from honey, vanilla and orchard fruit to dried spice, dark chocolate, toasted oak and campfire smoke across the six drams.

Your host will guide you through each whisky, explaining how ingredients, distillation methods, cask maturation and age influence the final character in your glass.

Whether you're completely new to whisky or already an enthusiast, this guided tasting will help you build confidence in identifying flavours and describing what you experience.

By the final pour, you won't need our tasting notes—you'll be writing your own.
