The greatly anticipated sequel to our highly popular Salt Marsh edition one whisky, which sold out online nearly
immediately to members of our email list. This is our maritime Tasmanian take on a classic sherry matured peated
whisky. Made by lightly smoking Tasmanian barley with local salt marsh peat, dug by hand not far from the
distillery, on a custom smoker made in-house by Head Distiller Rob.
Matured in second fill ex-Apera Sherry casks bringing notes of dried pear and brown sugar with a light nutty, salty
smokiness.

peats... On the coast we get some of the nutty, earthy characteristics.”

Our Salt Marsh edition one was matured in ex-Bourbon casks, chosen for sweetness to compliment the smoke. Our
new Salt Marsh edition two was matured in second fill ex-Apera Sherry casks, chosen to enable the light nutty, salty
peat to shine through, beautifully complimented by the lovely fruits & dark sugars.
This is no ashtray - it’s subtle, earthy and delicately balanced.
Only 690 bottles in the entire release.

Nose: Dried Pear, vanilla and mineral notes, smoke at the bottom.

Waubs Harbour Distillery is set on the edge of the ocean in Bicheno, on the far east coast of Tasmania. Once an old
oyster hatchery, now a world class whisky distillery with 5 salt-laden bond rooms, an on-site Cooperage and a
cooling system run entirely by the ocean. A Tasmanian family distillery, founded by Tim Polmear, Bec Polmear and
Rob Polmear (Head Distiller).
