Golani Single Malt Unicorn Cask

Every once in a while distilleries get really special casks. They get filled, monitored regularly, and at one point they’re deemed ready to be bottled. This Golani unicorn cask was to be a bottle your own at Whisky Live Tel Aviv 2020, but given the COVID-19 outbreak, that doesn’t seem to be on the books.

Golani Single Malt Unicorn Cask 27, Distilled 1/2017, Bottled 4/2020, French Oak Red Wine Barrique (110 Liter), Cask Yield 71.9 Liters, or 34.6% Angel’s Share (57.7% ABV)

Single malt new make, comprised of three different types of malt: Pale ale malt, pilsner malt and lightly peated malt.

One of only 90 bottles.

This unicorn cask is the first in a series of unique casks that we probably won’t see again, this specific bottling is from a 110 litres French oak cask which held a naturally fermented red wine with a strong sour cherry profile, the single malt new make that went in was from a 3 malt mash that included Pilsner, pale ale and speyside peated malts, in the 39 months of maturation we lost 34.6% to the angels, the result of all this is a full flavoured whisky with lots of spice from the oak, chocolate, cranberries and a gentle subtle peatiness in the finish, bottled at 57.7% for best enjoyment and in 250 ml due to limited quantities.
